My family and I are big fans of tortillas. We probably feature them in a meal once a week. We like making homemade burritos with beans and cheese or sometimes with beef or chicken. My children sometimes request tortillas with peanut butter and cinnamon or bananas for a snack.
Recently, I found out about a book by Jessica Harlan called Tortillas to the Rescue Cookbook. This cookbook features more than 100 recipes with you guessed it – tortillas! The recipes feature tortillas for breakfasts, snacks, wraps, main courses (with vegetarian options) and desserts.
I have tried a few new recipes out on my family featuring tortillas. One was black bean soup and this book had a recipe that used a tortilla bowl for the soup. You can make bowls for chili too. It was a nice “crunchy” addition with our soup. This book also has recipes to make your own tortillas.
I think this book is a great collection for any cook with the instructions being very easy to understand. This book would be great for the beginner cook or just an addition to your cookbook collection. The only bummer about this book is no pictures of the finished product. There are colored images on the cover, but that’s it. Otherwise, a fun and versatile book to make quick and crowd pleasing meals.
