Ingredients:
12 SCHWAN’S® Scallop Sautés (532), frozen
2 Tbsp butter
2 tsp minced garlic
½ cup diced tomatoes
½ cup white wine
2 Tbsp lemon juice
1 lb angel hair pasta, prepared
2 Tbsp chopped parsley
- · Add scallops to fry pan and cook over medium-high heat 10-12 minutes, turning over once until golden on each side.
- · Remove scallops from pan and set aside. Stir in butter, garlic and tomatoes and cook over medium heat 2 minutes.
- · Add wine and lemon juice, continue to cook 3-5 minutes or until liquid has reduced to half.
- · Toss sauce with pasta and scallops. Garnish with parsley and serve.
- · Tip: Garnish with shredded Parmesan
TORTELLINI SALAD WITH CRANBERRY, FETA AND GREENS

Ingredients:
3 cups fresh salad greens
¾ cup dried cranberries
4 oz crumbled feta cheese
¼ cup toasted, chopped pecans
¼ bag LIVESMART™ Six Cheese Tortellini (846), prepared
¼ cup thinly sliced red onions
¼ cup raspberry vinaigrette dressing

CHICKEN SALAD

Ingredients:
2 cups LIVESMART™ Diced Chicken Breast Meat (514), thawed
¾ cup mayonnaise
½ cup fresh celery, diced
¼ fresh onion, diced
½ cup chopped green apples
½ cup halved red seedless grapes
¼ cup chopped walnuts
Salt and pepper to taste

STRAWBERRY RHUBARB CAKE
Prep Time: 15 min | Total Time: 60 min | Serves 12
Ingredients:
½ bag LIVESMART™ Whole Strawberries “All Natural” (745), thawed
and crushed
1½ cups rhubarb, fresh or frozen, chopped
2 tsp lemon juice
¾ cup sugar
½ cup cornstarch
1 box white cake mix
- · Preheat oven to 350° F. Lightly spray 13 x 9-inch pan with cooking oil.
- · Heat strawberries, rhubarb and lemon juice in saucepan 5 minutes over medium heat.
- · Add sugar and cornstarch, and bring to a boil, stirring until mixture thickens. Remove

- · Prepare cake batter according to package directions.
- · Pour half of cake batter into pan, then spread the strawberry rhubarb filling on top.
- · Spoon remaining batter carefully over filling and bake 40-45 minutes.
