This time of year, rhubarb becomes plentiful. I am hosting my monthly craft group tonight and wanted to share this dessert with my friends. It was a recipe shared to me from an old co-worker.
Recipe:
Rhubarb Cherry Crunch
1 cup oatmeal
1 cup brown sugar
1/2 teaspoon salt
1 cup flour
1/2 cup soft butter
4 cups rhubarb
1 cup sugar
1 cup water
2 tablespoons heaping of cornstarch
1 can cherry pie filling
Stresusel Mix: mix oatmeal, brown sugar, salt, flour, and butter together. Press half into bottom of 9×13 pan. Cut up rhubarb and put on top of crust. Boil sugar, water, cornstarch together until thick. Add pie filling and spoon over rhubarb. Sprinkle remaining steusel mix over pie filling. Bake 45 minutes at 350 degrees.
