3 1/2 cups shredded zucchini
1/2 teaspoon salt
4 eggs, beaten
1/2 cup dry bread crumbs
1/4 cup all-purpose flour
2 teaspoons Italian seasoning
1/2 pound fresh mushrooms, sliced
2 teaspoons olive oil
1 can (15 ounces) pizza sauce, divided
3/4 cup chopped green pepper
1/4 cup sliced ripe olives, drained
11/2 cups 1-1/2 (6 ounces) shredded part-skim mozzarella cheese, divided
Top with remaining pizza sauce and cheese. Bake 15 minutes longer or until hot and bubbly. Yield: 6 servings.
