When I have a little extra help from my spouse on the weekends, I like to make homemade tortillas.
3 cups all-purpose flour
1 cup whole wheat flour
1 tsp. salt
1 1/2 cups water
6 tablespoons olive oil
That’s it for ingredients!
Directions:
- In a large bowl, combine flour and salt. Stir in water and oil.
- Turn onto a floured surface; knead 10-12 times, adding a little flour or water if need to achieve a smooth dough. Divide dough into 16 portions. (I like my tortillas a little large so my yield is usually half of what is noted in this recipe)
- On a lightly floured surface, roll each portion into a 7 ” circle.
- In a large nonstick skillet or griddle coated with cooking spray, cook tortillas over medium heat for 1 minute on each side or until lightly browned. Keep warm.
Yield: 16 tortillas. May half recipe. They are very filling!
