I had purchased “The Whole Family Cookbook” by Michelle Stern a few months ago to get some ideas for cooking with the girls. ISBN-13: 978-1-4405-1120-2. It is written for the young literate child in mind with each action being written out.
(We used to buy pancake mix from Sam’s Club, but I personally like this one better. I usually have to double it when making because it is so well liked with our family).
Pancake Mix
*6 cups of mix is enough to make 3 batches of pancakes
4 c. all-purpose flour, unbleached
2 c. whole wheat flour
3 tbsp baking powder
2 tsp kosher salt
3 tbsp sugar
To make the mix:
Measure all of the dry ingredients and pour them into an airtight container.
Put the lid on.
Shake the contents to combine.
Use within the next three months.
To use the mix and make pancakes:
Melt 2 tbsp butter
In a medium sized bowl, crack 2 eggs. Fish out any stray shells. Gently beat the eggs.
Measure 1 1/2 c. milk and add to the eggs.
Shake the pancake mix so that all of the ingredients are spread equally throughout the mixture.
Measure homemade pancake mix ( 2 cups) and add to the milk and eggs.
Add the cooled melted butter to the batter.
Stir to combine all of the ingredients together. It’s okay if there are a few lumps.
Cook in a skilled. Top with fresh fruit, cinnamon, powdered sugar, jam or pure maple syrup.
* We like this recipe with homemade kefir that I make substituted in for the milk. It gives it such a different taste. Or I think buttermilk could be a good substitute/replacement too. The batter is pretty thick with 1 1/2 c. milk. We usually add a bit more to thin it down, but it is personal preference.
I have tried a few other recipes in this book that are quite palatable and nice to do with the kids.
