Peanut Butter Chocolate Gooey Bars
Preheat oven to 350 degrees
Makes 3 dozen bars
13×9 inch baking pan, greased or lined with foil
1 (18.25 oz.) package devil’s food cake mix
1 cup (2 sticks) butter, melted, divided
1 (8 oz) package cream cheese, softened
1 c. creamy-style peanut butter
1 tsp. vanilla extract
1 (16 oz) package confectioner’s sugar
1. Mix the cake mix, 1/2 cup (1 stick) melted butter, and 1 egg in large bowl with electric mixer on medium speed until blended (dough will be thick). Pat evenly into prepared pan.
2. Beat cream cheese, peanut butter, and vanilla in large bowl with electric mixer on high speed until blended and smooth. Beat in remaining 1/2 cup (1 stick) melted butter and remaining 3 eggs. Beat in confectioner’s sugar until blended. Spread over prepared crust.
3. Bake 42-45 minutes until just set (do not over bake; bars should be slightly gooey). Transfer to a wire rack and cool completely. Cut into bars or squares. Cover and store in refrigerator.
Variation for Peanut Butter Gooey Bars: Prepare as directed, but use a white cake mix in place of the devil’s food cake mix.
