Sometimes I like to change it up from chocolate brownies so here is a recipe for butterscotch brownies.
Butterscotch Brownies
1/4 cup shortening or coconut oil
1 cup packed brown sugar
1 teaspoon vanilla extract
1 large egg
3/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup chopped nuts (optional)
1. Heat oven to 350 degrees Fahrenheit. Grease bottom and sides of square 8x8x2 inch pan.
2. Melt shortening or coconut oil over low heat; remove from heat. Stir in brown sugar, vanilla, and egg. Stir in remaining ingredients. Spread in pan.
3. Bake 25 minutes. Cool slightly in pan on wire rack. Cut into about 2″ squares while warm.
