I enjoy brownies and found a great dry mix that I can keep in the pantry and just add wet ingredients when I want to whip up a pan. These are a nice and chewy, not cake-like.
Brownie Mix:
5 cups all-purpose flour or combination of whole wheat and all-purpose flour (I did 2 1/2 c. all-purpose with 2 1/2 c. whole wheat)
1 tablespoon baking powder
7 1/2 cups sugar or sugar substitute
1 tablespoon salt
7 ounces unsweetened cocoa powder
Combine all ingredients and mix until thoroughly blended. Store in airtight container labeled with name and ate. Keep in a cool, dry place.

Chocolate Brownies: Makes approx. 10-12 brownies so adjust recipe for desired amount.
Ingredients:
2 cups Brownie Mix
1/4 cup milk (can use reduced fat)
2 eggs (beaten)
1 teaspoon vanilla extract
Optional: 1/4 cup chopped nuts
Preheat oven to 350 degrees Fahrenheit. Grease and lightly flour a 9″x9″ baking pan. Beat all the ingredients together until well blended. Pour into pan and bake 25-30 minutes or until inserted toothpick (test from center of pan) comes out clean.
