Bread Making

June 16, 2011 by Karen

I think there are few things that taste as good as freshly baked bread.  I made oatmeal bread last week, two times.  I thought it was moist and flavorful.  This is the recipe I had used and I usually do the dough cycle in my bread machine and then cook in the oven at 375 degrees for 30 mn.  Ovens may vary on temp and time.  I usually do a large/2 lb loaf.

Oatmeal Bread
Water 1 1/3 c.
Margarine or butter 3 tbs (I used grapeseed oil)
Sugar 3 tbs
Salt 1 tsp
Rolled Oats 1 1/3 c.
* Buttermilk Powder 1/3 c.
Yeast 2 1/2 tsp.

* Buttermilk powder is usually with baking items or you can sometimes buy from your local food coop.  It is nice not having to always have buttermilk in your fridge.  I do keep this product in the fridge once I open it.  It is a powder and a little bit does quite a bit.

I had set my first loaf on the counter to cool.  I guess it was too close to the edge because Jayden grabbed a chunk out of it.  Oops!

Loaf #2 done in a wider baking pan.  I like to use silicone baking pans.  I added ground flax seed to this one.

Loaf #2 another view.
