We try to make Monday night meals meatless and this is a recipe I like using.
- 1 Tbsp. olive oil
- 1/2 medium onion, finely chopped
- 4 oz. can mushrooms, rinsed and drained
- 1/2 c. green pepper, chopped
- 1 can (15-16 oz.) kidney beans, rinsed and drained
- 1 can (15-16 oz.) diced tomatoes, do not drain
- 1 tsp. chili powder
- 1 tsp. garlic powder
- 8-10 small whole wheat tortillas
- 8 oz. shredded cheese (I use three cheese blend from Sam's Club). Monterey Jack would work well too.
- Non-stick cooking spray.
- Pre-heat oven to 350 degrees Fahrenheit.
- Heat olive oil in frying pan on medium heat. Saute onions and green pepper. Cook approximately 2-4 minutes, until tender.
- Add mushrooms, beans, tomatoes, chili powder and garlic powder to frying pan and stir to combine.
- Tear tortillas into bite-sized pieces.
- Spray 8"x8" baking pan with non-stick cooking spray and layer with 1/2 of torn tortillas, 1/2 of frying pan mixture, and 1/2 of cheese.
- Repeat layers, cheese goes on last.
- Bake uncovered for 20 minutes.
- Fresh mushrooms may be used and sauteed with green pepper and onions instead of canned version
Add 1/2 of bean mixture and cheese.
Top with second layer of torn tortillas, bean mixture, and cheese.
Bake for 20 minutes uncovered.
Serve and enjoy!
