I found this recipe in the Taste of Home Big Book of Soup and it seemed to please my scrapbooking friends last weekend . Pizza Soup is a bit more of a convenience soup, but it tastes great and even the kids (at least mine) seem to enjoy it. You can start with a tomato base and add your favorite toppings, like you would for pizza and even make it vegetarian with omitting the ground beef or turkey. I added half a diced green pepper and a small can of mushrooms, drained. I think pepperoni may be too greasy though.
I made a few renovations to the original recipe.
- 1 pound ground turkey or beef cooked with 1/2 diced medium onion and drained
- 2 cans (26 ounces each) condensed tomato soup, undiluted
- 6-1/2 cups water
- 45 oz. spaghetti sauce
- 1 tablespoon Italian seasoning
- Any other pizza toppings
- 2 cups (8 ounces) shredded cheddar cheese
- Add and mix all ingredients, but cheese into 6 qt. crockpot and cook on high for 4 hours. Top soup in bowls with shredded cheese.
