Here’s a product I found quite unique – coconut made to be a vegan alternative to bacon. It is called CocoBacon® by Coconut Organics and as the name implies, is also organic and gluten-free. Coconut is high in healthy fats and highly digestible fiber so it is a nutritious snack or can be sprinkled on a variety of foods, like soups, salads, sandwiches, veggie and grain dishes, mashed potatoes, and desserts.
CocoBacon® is made from coconut chips, raw extra-virgin coconut oil, low-glycemic coconut sugar, high-mineral Celtic Sea Salt®, organic mesquite smoke flavor and Coconut Organics special organic spice blend. This product does not contain artificial flavors or preservatives.
As long as the bag is unopened, the product is shelf stable for approximately six months. It does come in a resealable bag. Once open, CocoBacon® should be used within a week. Each 2.2 oz. bag retails for around $4.00 each. A serving is 2 Tbsp. and each bag contains three servings. There are 130 calories, 13 grams total fat (11g saturated), no cholesterol, 230 mg sodium, 5 grams total carbs (3g dietary fiber) per serving.
