Way Better Snacks 12 Days of Holiday Snacking

 Way Better SnacksI have had the wonderful opportunity of sharing Way Better Snacks in the past and they are back again with “12 Days of Holiday Snacking” and a giveaway!  The holidays are certainly a time of snacking and it’s great to provide healthy snack options. Minnesota based Way Better Snacks are sprouted corn tortilla chips that taste great and are great for you too! 

Why Way Better Snacks are Way Better:

12 bloggers were asked to create a salsa, spread, or dip that pairs well with one or more of Way Better Snacks tortilla chips.  I was sent a gift card to purchase ingredients and samples of each chip flavor to practice pairing and so I elected to make a simple Cranberry Horseradish Dip, which I think goes best with the sweet potato variety.  To create this dip, you just need jellied cranberry sauce, honey, prepared horseradish, part of a red onion, and a block of cream cheese to pour the dip over. IMG_3804

Cranberry Horseradish Dip

Ingredients
  1. 1 (14-16 ounce) can jellied cranberry sauce
  2. 1/2 cup honey
  3. 1/3 cup red onion, diced finely
  4. 2 tablespoons horseradish
  5. 1 (8 ounce) package cream cheese, room temp
Instructions
  1. Combine cranberry sauce, honey, onion, and horseradish in a saucepan. Stir as you bring mixture to a boil.
  2. Pull from heat and allow to cool to room temp. Place in container and chill in the refrigerator at least 1 hour.
  3. Place cream cheese on a plate and spoon the cranberry mixture over the top.
  4. Can be made up to 3 days ahead.
Notes
  1. Whole cranberry sauce may be used instead of jellied cranberry sauce

 Simply add the ingredients to a pot on your stovetop and periodically stir.

Allow the mixture to come to a boil.  The cranberry sauce will liquefy.

    Mashed potatoes! I make the best mashed potatoes (if I do say so myself) but it requires a whole stick of butter, so I don’t make it very often. Maybe once or twice a year.
